Also known as Japanese Honey Mushrooms, Hon Shimeji are small, cloudlike clusters of button-capped Beech mushrooms with a savory, nutty flavor and an umami undertone reminiscent of fresh red shellfish. Although unpleasantly pungent and tricky to digest when raw, cooking coaxes out these rich flavors, with a texture that can morph from crunchy to buttery soft depending on how they’re prepared.
Notoriously difficult to cultivate, only a few operations around the world have managed to effectively recreate the conditions required to produce healthy, delicious Hon Shimeji.
